In the simplest of terms, this means that the 360 versions will run smoother and faster, and you'll have an easier time noticing subtle animations.

I believe it was Hideo Kojima himself that told developers to quit being morons, make a game on PS3 first, THEN port it in order to get good performance on both systems.
